Zucchini Boats
Saturday, February 6th, 2010Fun and festive, these zucchini boats deliver an eye candy quality that help make veggies more enticing to eat. Theyre also the perfect side dish to dress up ho-hum grilled chicken or fish. I originally had a similar recipe for zucchini boats on page 198 of our Fitter, Firmer, Faster book. For that recipe I used feta cheese, but in this one I use goat cheese instead. I swapped cheeses because goat cheese is easier to digest than feta cheese. Even though a surprising 25% of the American population is lactose intolerant, most lactose intolerant people can still digest goat cheese without any problems. I made the switch to goat cheese so more people could enjoy the recipe, but I think I actually like the taste of the goat cheese even better than the feta cheese. So that swap worked out well! I also added sundried tomatoes and an extra special pine-nut crumb topping. The pine nuts not only add a fabulous richness but I recently learned pine nuts contain pinolenic acid, a special type of fatty acid that triggers the release of an appetite-suppressing hormone called CCK. So, even though pine nuts contain a lot of fat, its a good kind of fat that is actually very helpful if you are trying to control your appetite and lose weight. Pine nuts are also exceptionally nutrient-dense and rich in protein. And, they make a fabulous substitute for those junky breadcrumbs made with refined flour!
